The invention relates to a process for producing modified popcorn suitable for diabetics having a sugar substitute or sweetener coating by popping raw maize under the action of heat and in the presence of the coating composition, the popping being carried out at a temperature of over 250 DEG C, instead of the conventional popping temperature of approximately 175 DEG C, the sweetener and if appropriate flavouring substances used in conjunction being preferably introduced into the popping vessel for only about 50 to 75% of the total popping time.
