The invention relates to a process and a device for preserving extracts (primary extracts) produced from Serenoa repens fruits. The preservation is carried out by treating the primary extracts in a high-pressure column with zones at various temperatures in the horizontal and vertical direction. A fractional extraction and deposition thus takes place in the column. The capric and caprylic acids which reduce the stability, and the unwanted odour and taste substances in the primary extract, are removed in a deposition vessel located outside the column. The secondary extracts obtained after the fractional extraction in the column can be kept for considerably longer than the starting materials used and are suitable as active substances for pharmaceutical and cosmetic purposes. <IMAGE>
