PURPOSE:To provide a method for producing SEISHU (refined rice wine), capable of suppressing proliferation of Lactobacillus heterohiochi even if SEISHU (refined rice wine) during storage or after bottling is infected with Lactobacillus heterohiochi. CONSTITUTION:The method for producing the SEISHU is to add in cultured mixture of Lactobacillus acidophilus having acidocin 8912-producing ability or acidocin 8912-containing liquid to SEISHU from which protease activity is removed. |
