NOVEL THERMOSTABLE BETA-GALACTOSIDASE AND PRODUCTION THEREOF

PURPOSE:To obtain a novel thermostable beta-galactosidase suitable for producing low-lactose cow's milk or hydrolyzing the lactose in whey. CONSTITUTION:The novel thermostable beta-galactosidase is contained in a culture prepared by culturing Bacillus subtilis holding a recombinant plasmid containing a thermostable beta-galactosidase gene of Bacillus stearothermophilus. Furthermore, the method for producing this thermostable beta-galactosidase is provided. The resultant thermostable beta-galactoside is capable of manifesting better thermostability than that of thermostable beta-galactosidase derived from the well-known Bacillus stearothermophilus and better affinity for substrates than that of a commercially available enzyme.
