Universal machine for processing dry fruit and the like, which comprises an outer metallic structure 1 with external panelling 2 made from heat-insulating material, having, on the inside, an enclosure in which there are chain conveyors 3 for conveying vessels or scoops 4 actuated by a toothed drive wheel 5 at the upper end, on the shaft 6 of which is coupled the transmission 7, with a gear-motor unit 8 provided with a variable speed drive, the inner enclosure being provided with the separator partition 9 which separates it from the recirculation chamber 10, inside which and close to the front end of the machine are mounted the fans 11 facing the heating resistance elements 12 already located inside the scoop enclosure, close to the scoops, there being, at the rear end of the inner chamber, a communication 13 with the recirculation chamber, next to the product-drop hopper 15, the structure carrying, at its front end, the communication 16 with the turbo aspirator 17 for cooling by means of aspiration, extracting the powder and particles in suspension via the conduit 18 to the cyclone 19, the merchandise being introduced via the oscillating hatch 26 actuated by the actual scoops. <IMAGE>
