PURPOSE:To provide an apparatus for the preparation of say sauce capable of quickly analyzing the components of soy sauce and shortening and automating the preparation process by supplying the unconditioned soy sauce directly to a multiple-component analyzer, thereby directly analyzing the multiple components of the soy sauce. CONSTITUTION:Raw soy sauce 2 free from conditioning treatment of the components and stored in a soy sauce tank 1 is supplied (4) to a near infrared analyzer 3 and the signal of the analysis result is inputted into a controller 8. The amount of additives to be charged are calculated by the controller and the valves 9, 10, 11 are operated by the calculated results. The raw soy sauce 2 having conditioned components is transferred (22) to a plate heater 23, heated and supplied to a precipitation tank 24. Drags are separated in the tank 24 and the produced clear soy sauce is examined by a near infrared analyzer 27 to confirm the components. |
