PURPOSE:To produce an inexpensive lactic acid by a simple device with a small amount of by-products fermented by adjusting pH of a medium with ammonia during lactic acid fermentation with a microorganism, recovering and reusing the ammonia after completion of the fermentation to reduce cost related to fermentation. CONSTITUTION:In a process comprising lactic acid fermentation with a microorganism, a medium during the lactic acid fermentation is adjusted to proper pH with ammonia, a 4-5C alcohol is added to at least one solution selected from a solution of ammonium lactate obtained by the fermentation, a concentrated solution of the ammonium lactate and a solution obtained after removal of solid content containing the microorganism used for the fermentation from the solution or the concentrated solution, dehydration and esterification reaction between lactic acid and the alcohol are carried out by heating and ammonia is simultaneously liberated and recovered. The solution obtained by the esterification reaction is mixed with a mineral acid, heated under an acidic condition, dehydrated, esterification between the lactic acid and the alcohol is promoted and completed to produce a lactic ester. |
