PURPOSE:To provide wheat starch containing small diameter starch particles having <= a specific particle diameter in a relatively large content, mildly digested and absorbed on its intake, effective for preventing diabetes, hyperlipermia, arteriosclerosis, obesity, etc., and useful for various foods, feeds, etc. CONSTITUTION:Raw material wheat flour is classified into a class having a particle diameter of <=15mu and a class having a larger particle diameter with an air classifying machine, and the class having a particle diameter of <=15mu is separated to provide wheat flour in which >=25wt.% of starch contained therein comprises starch particles having a particle diameter of <=10mu. The wheat flour is mixed with water and subsequently kneaded to form a dough. The dough is left for 1hr for the sufficient hydration of gluten, subjected to the flow of water, and simultaneously repeatedly crumpled to wash out the starch. The obtained starch milk is filtered with a 32 mesh sieve to remove gluten. The starch milk is centrifuged to precipitate starch. The precipitated starch is recovered, dried at 80 deg.C, classified with a 100 mesh sieve to provide the objective wheat flour containing starch particles having a particle diameter of <=10mu in a content of >=25wt.%. |
