PURPOSE:To provide the subject improving agent comprising eggshell fine powder consisting mainly of calcium carbonate, giving noodles having good bodies, inexpensive and capable of being safely used. CONSTITUTION:The objective improving agent comprises eggshell fine powder consisting mainly of calcium carbonate. The improving agent is preferably obtained e.g. by a method comprising breaking eggs, removing the egg liquid contents from the eggs, coarsely grinding the remaining eggshells, washing the ground eggshells, if necessary, sterilizing the washed eggshells, thermally drying the sterilized eggshells at 300-400 deg.C for 4-5min to reduce the content of water to <=5%, grinding the treated eggshells with a hammer mill and subsequently sieving the ground product with a sieve giving a particle size of 300 mesh pass. The improving agent is preferably added to the wheat flour of raw material in an amount of 0.25-0.7wt.%. |
