PURPOSE:To obtain the novel glucoside useful as an antioxidant for foods, having inhibitory action on oxidation of lipid, by grinding sesame, de-fatting, extracting with water, a water-soluble solvent, etc., treating the extract with beta-glucosidase, separating the formed product. CONSTITUTION:Seeds of sesame of China growth are ground, collected in a flask, de-fatted with hexane, etc., at a room temperature for 5 hours while stirring, filtered, air-dried, extracted with water, a water-soluble solvent such as ethanol or its mixed solvent at 0-50 deg.C for 15 hours while stirring, filtered, the filtrate is concentrated under reduced pressure at <=40 deg.C to obtain an extract. Then, the extract is adjusted to pH5.0, dissolved in water, treated with beta-glucosidase at 40 deg.C for 20 hours and extracted with ethyl acetate. The extracted solution is concentrated under reduced pressure, purified by liquid chromatography to obtain the objective sesaminol glucoside of formula I (R is organic group of formula II or formula III) effective for preventing oxidation of lipid existing in an aqueous solvent. |
