PRODUCTION OF EDIBLE CELLULOSE

PURPOSE:To obtain a method for producing edible cellulose in which the produced film thickness of a cellulose film per unit time can be increased and the cellulose film having high transparency and hardness suitable as a food can be produced. CONSTITUTION:The method for producing edible cellulose is to culture a microorganism which belongs to the genus Acetobacter or Gluconobacter and having the ability to produce cellulose in a culture medium containing 0.1-5% ethanol or a culture medium containing <=5% total amount of 0.1-3% ethanol and acetic acid and produce the cellulose. Thereby, the produced film thickness of the cellulose film per unit time can be increased to control the transparency and hardness of the cellulose film which are important factors as a food.
