PREPARATION OF COOKED RICE HAVING REFRIGERATION RESISTANCE

PURPOSE:To prepare cooked rice capable of keeping the soft state even at a refrigeration temperature and free from the troubles caused by the refrigeration storage of rice. CONSTITUTION:Cooked rice resistant to the collapse of the rice grain is prepared by adding water to cooked rice to attain a water-content of 60-68%.
