Sugar surfactants with an improved scent can be produced by treating mixtures containing (a) alkyl and/or alkenyl oligoglycosides of formula R<1>O-[G]p where R<1> is an alkyl or alkenyl group with 4 to 22 carbon atoms, G a sugar residue with 5 or 6 carbon atoms and p a number from 1 to 10, and (b) water and/or fatty alcohols with water vapor at a temperature of 90 to 120 DEG C.
