PURPOSE:To provide a yam juice filled in a sealed vessel and resistant to discoloration and provide an apparatus for the preparation of the juice. CONSTITUTION:The preparation apparatus 10 for yam juice filled in a sealed vessel is provided with a yam juice supplying part 20 to grate a yam 5 and supply the produced yam juice and a yam juice filling part 40 to fill the yam juice 2 supplied from the supplying part 10 in a vessel 3 together with nitrogen gas. The yam juice filling part 40 is composed of a yam juice pouring device 44 to pour a definite amount of yam juice 2 into the vessel 3 transferred by a turn table 42, a nitrogen gas blasting nozzle 461 to blast nitrogen gas into the vessel 3 filled with the yam juice and a heat-sealing part 46 to heat-seal a lid 4 to the vessel 3. |
