PURPOSE:To provide the subject peptide having a specific amino acid sequence, having a an adipose cell differentiation-inhibiting ability, and useful for preventing and treating hypertension, arteriosclerosis, etc., as an adipose cell differentiation-inhibiting agent, and as a functional food having an adipose cell differentiation-inhibiting ability etc. CONSTITUTION:An animal protein such as fish protein, fish meal or globin, or a vegetable protein such as wheat gluten or soybean casein as a raw material is dispersed in water in a solid content of 5-30wt.%, adjusted to the optimal pH of a protease with an acid or alkali and then subjected to a hydrolysis reaction using the protease at 20-27 deg.C for 3-70hr. The produce protein hydrolysate is purified by the suitable combination of an ion exchange resin method, an ultrafiltration method, a reverse phase chromatography method, etc., to provide the objective peptide comprising Val-Try-Pro and/or Val-Thr-Leu and having a adipose cell differentiation-inhibiting ability. |
