摘要 PURPOSE:To readily obtain the subject compound strengthening the salty and body tastes of a food without deteriorating the original flavor of the food by subjecting glucose to an alkali decomposition reaction with barium hydroxide octahydrate and depositing the product as the Ba salt. CONSTITUTION:Ion exchange water and anhydrous D-glucose are added into a flask and subsequently heated and stirred at 87-89 deg.C under the flow of an ordinary pressure nitrogen gas to form a homogeneous solution. The solution is mixed with a barium hydroxide aqueous solution comprising barium hydroxide octahydrate dissolved in ion exchange water in a ratio of 0.9-1.5 moles based on the glucose and subjected to an alkali decomposition reaction at 80-90 deg.C to produce triose reductone. The triose reductone is first deposited as the barium salt, and the reaction mixture is cooled to 20 deg.C. The precipitates are filtered off and washed to further obtain the objective triose reductone capable of strengthening the salty and body tastes of a food and weakening its acidic taste without deteriorating the original flavor of the food.
