PURPOSE:To provide a food binding method, which is easy in application and capable of binding any type of foods without deteriorating nutritive value and taste of protein. CONSTITUTION:Thrombin aqueous solution is emulsified in water-in-oil emulsion or thrombin powder is coated with a water-insoluble substance or a water-soluble polymer. There are provided the food which is compound with a mixture solution obtained by mixing the treated thrombin with a fibrinogen solution; and also the binding method of food. |
