After a preliminary phase of cleaning the locust bean, to remove the impurities which accompany it, it is firstly subjected to a heat treatment, specifically to a stage of frying in any edible oil such as, for example, sunflower oil, soya oil, etc., in an appropriate container and at a constant temperature for the oil of the order of 170 degree C and for a treatment time of the order of 45 seconds. Next, the excess oil adhering to the skin is removed, for example by means of centrifugation, and then the locust bean is subjected to a stage of cooling, with the collaboration of a bath of drinking water at ambient temperature, always under 20 degree C, for a period of the order of 120 seconds. Lastly, the actual peeling takes place, which is carried out, in turn, in two stages: a first stage of impacting, for peeling the skin, separating the cotyledons and separating out the seed (germ), and a second stage of abrasion to remove the skin from each of the cotyledons.
