PURPOSE:To obtain a magnesium chloride composition having low action rate free from deliquescence, producing TOFU having good taste by mixing magnesium chloride with a cyclodextrin in the presence of water, drying to include magnesium chloride in the cyclodextrin. CONSTITUTION:A cyclodextrin (e.g. beta-cyclodextrin) is put in a beaker, mixed with water into a slurry, into which magnesium chloride-hexahydrate is gradually added while agitating by a stirrer and magnesium chloride.hexahydrate is stirred with the cyclodextrin at normal temperature for 90 minutes to sufficiently include magnesium chloride. hexahydrate in the cyclodextrin. The resulting material is spread in a tray, lyophilized and ground by a mortar to give the objective magnesium chloride composition having low action rate free from deliquescence useful as a protein coagulant for producing TOFU having improved texture, comprising cyclodextrin inclusion powder of magnesium chloride.hexahydrate. |
