发明名称 WATER-ABSORBED RICE AND ITS USE
摘要 PURPOSE:To provide water-absorbed rice suitable for a raw material of various kinds of cooked rice products, its production method and its use. CONSTITUTION:Rice is treated with hot water of >=60 deg.C and/or steam and/or pressurized steam to prepare rice containing absorbed water in an amount of 45 to 100 pts.wt. based on 100 pts.wt. rice in the first stage. Before the temperature of the resultant rice containing absorbed water drops below 60 deg.C, the rice is immersed in hot water or water and/or soup stock, soup, sauce, etc., respectively exhibiting a temperature 5 deg.C or more lower than the rice temperature for a prescribed hour in the second stage so as to let the water-impregnated rice prepared in the first stage further absorb water in an amount of 5 to 50 pts.wt. based on 100 pts.wt. rice, thus producing the objective water-absorbed rice. In case the rice temperature is allowed to drop once, the rice is heated up to >=35 deg.C again and immersed in hot water and/or soup, etc., of 5 deg.C or more lower temperature so as to let the rice further absorb water in an amount of 5 to 30 pts.wt. based on 100 pts.wt. rice, thus producing the objective rice more abundantly containing absorbed water.
