PURPOSE:To form the subject saccharide by reacting a cyclic inulooligosaccharide with fructose by rearrangement. CONSTITUTION:The pH of a culture medium containing given amounts of sucrose, a yeast extract, etc., is regulated to 7.0, and this medium is sterilized with steam. A strain of a microorganism such as Zymomonas mobilis is implanted in the sterilized medium and the resulting medium is allowed to stand at 27-37 deg.C to incubate the microorganism. The microorganism is then collected by centrifugation, etc., and suspended in a phosphoric acid buffer having a pH of 7.0. A cyclic inulooligosaccharide consisting of 6-8 fructose molecules bonded together through beta-2,1 bonds and sucrose are added in respective given amounts to the suspension. The saccharide is allowed to react at 25-50 deg.C for a given time, and the suspension is then heated to 100 deg.C to deactivate the enzyme. The deactivated microorganism is removed by centrifugation, and the suspernatant is purified by column chromatography, etc., to obtain the objective saccharide represented by the formula (wherein R is H or beta-D- fructofuranosyl). |
