PURPOSE:To prepare a baked cake having even and uniform scorch mark on the surface, free from generation of surface skin in thermal drying, giving a nonporous pudding base and having excellent appearance, palatability, etc., by using a specific method. CONSTITUTION:A pudding base containing gelatin is put into a plastic container and steamed preferably at 60-100C for 3-40min to effect the coagulation of the pudding base. A bubblecontaining base containing gelatin is placed on the top of the coagulated pudding base and baked at a high temperature for a short time to apply uniform scorch mark on the surface of the bubble-containing base and obtain the objective product. The bubble-containing base is e.g. whipped cream and raw material for mousse. The baking is preferably carried out at 160 deg.C for several min to 30min using an electric heater or a gas burner. |
