PURPOSE:To process eel bone which has been unsuitable as a food raw material and to enable the effective utilization of the bone as a food raw material. CONSTITUTION:Raw eel bones are washed with water, thrown into an aqueous solution of 1% sodium hydroxide heated at 80 deg.C and boiled for about 10min under agitation to dissolve the meat attached to the raw bones and get exclusively the bones. The bones are thoroughly washed with water and boiled in a pressure cooker until the bones are softened. The eel bones treated by this process are utilizable as a food raw material. |
