The present invention relates to a process for producing itaconic acid and/or one of its salts by aerobic fermentation of a carbohydrate by means of a suitable microorganism, characterised in that it uses, as carbon substrate, unique or otherwise, an effective quantity of glycerol. As microorganisms which can be used according to the invention, there may be mentioned more particularly the species Aspergillus terreus and Aspergillus itaconicus.
