PURPOSE:To obtain a product uniformly formed in each product of ingredient- containing solid instant food produced by vacuum lyophilization method, having uniformly mixed ingredients, being porous and hard in structure of the lyophilized product, hardly causing deformation by oscillating impulse in packaging or transporting, excellent in restoring property by hot water and rich in flavor. CONSTITUTION:A gelatinized material consisting essentially of modified starch such as phosphoric acid-crosslinked starch or acetic acid esterified starch having high freeze aging resistance is used as a solidifying agent for ingredients and the ingredients are bounded by this starch gelatinized material and then subjected to lyophilization under vacuum to provide the objective solid instant food. |
