PURPOSE:To provide a new autolytic yeast capable of developing mutation at sites different from those in PKCI or BCKI gene, to identify a gene capable of suppressing such autolysis, to identify a protein coded by the gene, and to provide a method for producing an yeast extract and proteins with the new yeast as raw material. CONSTITUTION:The objective yeast, a thermosensitive autolytic yeast capable of developing mutation, consisting of Saccharomyces cerevisiae FERM P-13410.
