PURPOSE:To massively obtain roasted eggplants without deteriorating their flavors by notching the surfaces of fresh eggplants, roasting the notched eggplants, peeling their skins, freezing the peeled eggplants and subsequently vacuum-packaging the treated eggplants. CONSTITUTION:The surfaces of eggplants are notched with a notching mechanism 5 equipped with a guide 9a and a cutter 9b and roasted in a roasting passage 6 in a roasting station 1. The skins of the roasted eggplants are peeled in a surface skin-peeling station 2, and the treated eggplants are frozen in a freezer 3 and subsequently vacuum-packaged with a vacuum-packaging machine 4. |
