FOOD FOR THERMAL COOKING AND ITS PRODUCTION

PURPOSE:To obtain a food capable of solving various difficulties such as a difficulty of mass production found in a food having a sweetening liquid applied to the surface of DAIGAKU-IMO (a cut, fried and caramelized sweet potato), etc., unfavorable handleability and troublesomeness of distribution and freezing and preserving at a stroke and a method for producing the food. CONSTITUTION:This food is cooked by dry heating and characterized by applying a powdery or a granular sweetener soluble in hot water to the surface of a solid food with 20-90wt.% moisture content. This method for producing the food for thermal cooking is to preapply water or an aqueous solution to the surface of the solid food with 20-90wt.% moisture content, wet the surface and then apply the powdery or granular sweetener soluble in hot water thereto.
