PURPOSE:To prepare a fried GIAOZ (dumpling stuffed with minced pork) capable of keeping crisp palatability, taste and flavor of fried surface and having uniform baked color by adding cereal flour and protein to a mixture of water, oil and fat and an emulsifier, emulsifying the obtained mixture, applying the emulsion to the frying surface of a GIAOZ and frying the GIAOZ. CONSTITUTION:An emulsion is produced by mixing water, oil and fat (e.g. rapeseed oil) and an emulsifier (e.g. lecithin) with cereal flour (e.g. rice flour) and/or protein (e.g. albumen powder) and a seasoning (e.g. soy sauce) at ratios (water: oil: emulsifier: cereal flour: protein: seasoning) of (40-65%):(30-50%):(0.1-2%):(5-30%):(0.3-3%):(0.1-5%) and stirring with a mixer. The emulsion is applied to the frying surface of a GIAOZ, the GIAOZs are arranged on a hot plate heated at 180 deg.C, fried for 1min, added with water, covered with a lid, steamed for 7min, opened and finally fried for 1 min to obtain the objective fried GIAOZ capable of keeping freshly fried crisp palatability, taste and flavor of fried surface and having uniform baked color and excellent appearance. |
