PURPOSE:To obtain a new alkali pullulanase useful as an ingredient for cleansing agents for dishes and detergents for clothing. CONSTITUTION:An alkali pullulanase has properties capable of producing maltotriose by decomposition of alpha-1,6-glucoside bond, hydrolyzing alpha-1,6-glucoside bond of starch, aminopectin, etc., and specifically hydrolyzing sugar having branched structure with degree of polymerization not lower than that of maltotriose, reacting at reactional pH of 6.5-10.5 (optimum pH of 8.5-9.5) and 35-60 deg.C (optimum temperature of about 50 deg.C) and has 115000+ or -5000 molecular weight (measured by SDS electrophoresis). The alkali pullulanase is obtained by culturing a transformed microorganism consisting of a pair of bases of about 6.3 Kb coding alkali pullulanase and transformed with a recombinant vector containing a DNA fragment having a restriction enzyme map of the Figure. |
