摘要 PURPOSE:To prepare bread dough capable of keeping the quality at a low cost without varying the conventional formulation and production process of dough and preservable by refrigeration or freezing without exerting bad influence on the bread dough. CONSTITUTION:The bread dough for baking bread is produced by compounding bread raw material with water and baker's yeast and kneading the mixture. The baker's yeast to be used in the above process is a mutant originated from freeze-resistant baker's yeast and having depleted or remarkably suppressed growing power and fermentation power at low temperature.
