发明名称 PREPARATION OF GLOBULAR FOOD
摘要 PURPOSE:To prepare a globular food composed of a membrane and a fluid material contained therein, such as the one similar to salmon roe, by adding an aqueous solution of a calcium salt dropwise to an aqueous solution of sodium arginate. CONSTITUTION:An aqueous solution of a calcium salt having a viscosity of >=4X 10<2>cp is added dropwise to an aqueous solution of sodium arginate having a concentration of >=0.2%. The viscosity of the calcium solution can be adjusted by adding a thickener such as tragacanth gum, xanthan gum, etc. When the viscosity of the calcium solution is lower than 4X10<2>cp, the droplet of the solution spreads over the surface of the arginate solution thus failing to form a globular food. When the concentration of sodium arginate is lower than 2%, the droplets of the calcium solution coagulate together and the uniform formation of the glogular food is inhibited.
