The intention in this method is to optimise recooling of goods which are drawn off while hot in order to obtain constant product quality within tolerable limits, and in particular under the extreme, but in practice frequently occurring, operating conditions of system standstill. This is achieved by means of process technology, in that when the blockage occurs, the product which is situated in the inlet region at a temperature in which it will suffer damage and in the region upstream of the inlet region is fed to that zone of the tunnel refrigerating system which is downstream of the inlet region and a sufficient quantity of product is discharged from the outlet side of the tunnel refrigerating system and is stored and in that when the transfer of product into this zone has been completed, refrigerating action is undertaken in the said zone which cools the product situated there to a temperature which is not harmful to it (Figure 7). <IMAGE>
