PURPOSE:To provide flour for uncoated deep fry containing lipase, etc., in combination with protease, excellent in softness and chewability, free from dry touch, having an excellent taste and an excellent juicy mouth feeling and useful for chicken, etc. CONSTITUTION:The objective flour for uncoated deep fry contains (A) preferably 30000 to 70000PaUN (per 100g flour for uncoated deep fry) protease such as papain in combination with (B) one or both of preferably 150000 to 350000U lipase and preferably 12000 to 24000DUN alpha-amylase. |
