PURPOSE: To obtain a salty taste strengthening agent for food or beverage having a reduced salt content and to strengthen the salty taste of food or beverage. CONSTITUTION: This salty taste strengthening compsn. contains a food or beverage contg. an amt. of salt smaller than the conventional amt. and a capsulated ammonium salt enough to strengthen the salty taste of the food or beverage. The ammonium salt is obtd. from ammonia formed during the hydrolysis of protein.
