<p>PURPOSE:To produce gamma-cyclodextrin on an industrial scale at a lower cost by using gamma-cyclodextrin.glucanotransferase. CONSTITUTION:The yield of y-cyclodextrin in the production of gammacyclodextrin and beta-cyclodextrin by the treatment of starch with gamma- cyclodextrin.glucanotransferase is improved by adding ethyl alcohol to the reaction liquid, thereby promoting the formation of gamma-cyclodextrin while suppressing the production of beta-cyclodextrin.</p> |
