The system consists of a "module" comprising a stackable chassis holding a traditional cask which is covered by a casing through which an air flow whose temperature and humidity are regulated flows, and which is connected by casings to an air-conditioning unit (drawing A). The "module" may consist of a metal cabinet into which oak wood slats are fitted which are in contact with the wine via one of their faces and with the circulating air flow via the other face (drawing B). Air-conditioning may be carried out with a generator of hot and cold water and "pulser units" of air, whose temperature and humidity are regulated, it being possible for one "pulser unit" simultaneously to supply a plurality of "modules" (drawing C). Sensors for monitoring the regulation and measuring the parameters indicative of the ageing of the wine are connected to a central measurement unit and a microprocessor. <IMAGE>
