Sweetening syrup and confectionery manufactured using this syrup

A new sweetening syrup containing from 80 to 95% of maltitol, intended for the manufacture of confectionery and in particular for the manufacture of cooked sugars and semi-crystalline items. This sweetening syrup contains less than 5% of hydrogenated monosaccharides of molecular weight less than or equal to 182 and from 3 to 19% of an agent for controlling the propagation of the crystallisation of maltitol, which agent has a molecular weight greater than 1300.
