PURPOSE:To obtain a food ingredient useful for processed foods such as TOFU (bean curd), animal meat or marine paste product. CONSTITUTION:A food ingredient is obtained by blending soybean protein having >=40 water-soluble, protein index in water at 10 deg.C with an edible oil in the ratio of 3 to 2-5. Since the food ingredient has high resistance to freezing denaturation, it can stand distribution in a chilled or frozen state. |
