PURPOSE:To provide a fermented seasoning having flavor of genuine rice-bran paste bed, to provide a method for producing this seasoning in a short time, and to provide a pickle seasoning capable of making in a short time genuinely flavored vegetables seasoned in rice-bran paste. CONSTITUTION:Tangle extract is mixed with a suspension of rice-bran paste, and the mixture is inoculated with lactic bacteria and yeast to effect fermentation to obtain the objective fermented seasoning. The other objective pickle seasoning can be obtained by adding a seasoning ingredient to this fermented seasoning. |
