The invention relates to an installation for the rough cutting-up of parts of slaughtered animal carcasses such as sides of pork and quarters of beef. It is intended to minimise costs and losses during this stage in the processing of meat and in subsequent cutting up into smaller pieces. According to the invention, the object is achieved in that storage elements are situated on conveying hooks, the contents of the said storage elements are accepted by a store collecting device and the said contents form the basis for actuation of the subsequent working elements. The cutter parts are transferred to cutting-up bolts, storage devices, processing machines or stripping machines. In order to minimise cutting-up losses, manipulating, positioning and conveying devices are used. The invention is explained in Figure 1. The sides of pork suspended on the conveying track 1 are cut by the severing device 5 into the leg and the rest of the carcass. The rest of the carcass is taken over by the manipulating, positioning and conveying device 6, deposited on the manipulating table 7 in a specific position and is roughly cut up by the severing device 15 which resembles a guillotine. <IMAGE>
