PURPOSE:To obtain a homogeneous and firm gel, by treating a pectic polysaccharide with pectin methyl-esterase in the presence of a polyvalent metal ion. CONSTITUTION:The objective gel can be produced by treating a pectic polysaccharide compound mainly of a highly mothoxylated linear poly-alpha-1,4-D- galacturonide (e.g. produced by heating and extracting seed of Ficus awkeotsang Makino) with pectin methylesterase in the presence of a polyvalent metal ion (e.g. Ca<2+>, Mn<2+>, Mg<2+>, etc.). |
