A process for manufacturing a proteinaceous foodstuff of reconstituted meat or meat substitute or the like, which comprises the steps of forming the reconstituted meat or meat substitute into slabs and conveying the slabs along a production line past a cutting head (39, 40) of an apparatus having a conveyor (37), the cutting head having at least one cutting or shearing blade (39, 40) mounted so as to cut or shear the slabs transversely substantially perpendicular to the direction of motion of the conveyor.
