An electroheating apparatus and method for continuously treating pumpable food using one or more electroheating cells (7") comprising spaced electrodes 20, 50. In one embodiment, the cells include a pair of concentric electrodes (20, 50) between which the food is pumped, and whose longitudinal position may be adjustable. The electrodes are connected to a high frequency AC energy source (70) (Fig. 6) which passes current through the food to heat it based upon its own resistivity and the electrode gap. In another embodiment, two different functioning electrodes (7", 100, 110) (Figs. 5 and 6) are used, connected in series, so as to provide long run times and high process temperatures. Also disclosed is an arrangement with two pairs of electrodes supplied with high voltage and low current and low voltage and high current respectively. <IMAGE>
