PURPOSE:To obtain a red pigment having high safety and usable for foods, detergents and cosmetics, etc., in a large amount by culturing a strain of the genus Epicoccum of filamentous fungi in a nutrient medium, accumulating a red pigment in the culture medium and fractionating and recovering the pigment. CONSTITUTION:Fungal strain of the genus Epicoccum of filamentous fungi [e.g. Epicoccum nigrum sp. RDM-R (FERM P-12892)] is inoculated into a liquid medium and subjected to shaking culture at 20 deg.C for 7-10days to accumulate a red pigment in the culture medium. The culture medium is centrifuged to separate a supernatant from the fungal body and the supernatant is subjected to ultrafiltration using an ultrafilter membrane capable of separating a polymer having >=20000 molecular weight to remove high polymer substances and the permeated liquid is concentrated by reverse osmosis to mass-produce the objective red pigment having high safety because of being produced from a selected and bred strain and so capable of using for foods, detergents, cosmetics, etc. |
