Skinning of animals, e.g, sheep, comprises: (a) suspending the animal by its rear legs, (b) making a cut between the rear legs along the anterior section of the haunch down towards the abdomen or thorax, (c) gripping the skin at the lower end of the cut, pref. with a pincer, and pulling upwards through the arc formed by the legs as far as the tail, (d) cutting the tail and sepg., (e) making one or more cuts extending from the mid point of the initial cut to the front of the lower legs, (f) sepg. the skin from the back, flanks, thorax and front legs, and (g) cutting the skin around the neck and sepg. from the carcass. Appts. for carrying out the process is also claimed.
