PURPOSE:To easily prepare a seasoning oil having the taste and flavor of crustaceans and exhibiting reddish orange color. CONSTITUTION:The crustacean seasoning oil is produced by using the by-product of crustaceans and edible oil and fat as main raw materials and subjecting the materials to a hot frying step, hot boiling step, separation of oil and fat, addition of antioxidant and purification of oil and fat. The obtained seasoning oil has weak odor compared with commercially available crustacean flavor, however, it has natural taste and flavor of crustaceans and the quality of the odor can be varied by varying the hot frying conditions. |
