PURPOSE:To obtain SOBA (buckwheat noodles) having adjusted protein useful as a food for a patient of hepatopathy restricting intake of electrolyte such as protein, phosphorus and potassium. CONSTITUTION:Buckwheat noodles having adjusted protein contains <=5g protein, <=100mg phosphorus content and <=100mg potassium content in 100 components of dried buckwheat noodles. At least >=30% buckwheat flour, 10-40% wheat flour and 30-60% starch, thickening polysaccharide or a mixture of starch and thickening polysaccharide are processed by the same production method of ordinary buckwheat noodles to give buckwheat noodles having adjusted protein. |
