Prodn. of germinated rice comprises: (1) forming a layer of rice seeds 0.5-20 (pref. 1-5) cm thick; (2) washing with sterile water; (3) soaking in sterilised water for not over 12 (pref. 8-10) hr. in a humid atmosphere (close to satn) at 15-35 (pref. 25-30) deg C, pref. while exposed to sunlight; (4) during this period the seeds are sprayed with water at the same temp., spraying being for 5-30 (pref. 10-15) min, 1-6 times per 24 hr. depending on the thickness of the layer; and (5) drying the seeds to residual moisture content 10-14 (pref. 11-12)%. Also new are germinated rice seeds produced by this process. |
