PURPOSE:To produce a food material capable of adding in an effective amount to a food weak in smelling, e.g. noodle by treating chitin or chitosan with hot water and removing the peculiar fishy smell. CONSTITUTION:Chitin or chitosan is treated with hot water. The hot water treatment method is carried out by bringing hot water into contact directly with chitin or chitosan (under boiling) or bringing steam into contact therewith-(in autoclave). Chitin or chitosan is formed into flakes each having <=1cm square and the amount of water brought into contact is preferably 5 to 50 times the flakes on volume base. |
